Roasting lamb mince in the oven (also see beef mince!) is a wonderful technique to give you crispy lamb without adding any extra oil. We’re seasoning the lamb with a merguez style spice mix. Merguez is a traditional North African lamb sausage flavoured with fennel, coriander, paprika and harissa. Our merguez mince is served in baby gem lettuce cups, roasted red pepper and couscous, then finished with a lemon dressing.
