Chicken piccata is a classic Italian cooking method, using lemon, capers and parsley. For a lighter version we’re using some of the pasta cooking water to start our sauce (a useful tip for other dishes too!). Teamed with linguine, cherry tomatoes and sweet balsamic leeks on the side.
