This summery salad is bursting with flavours from the lemony courgettes, creamy mozzarella and peppery green leaves and tomatoes. For a twist we’ve added pan fried gnocchi. We love the crispy texture you get from lightly pan-frying gnocchi. For a final touch we’re making a simple dressing with aromatic basil, mustard and white wine vinegar.
